Market Outlook
Beef – is steady. Producers are seeing higher that usual numbers available which in turn is creating some bargins.
Veal – Veal is still strong right now. But have seen some slight decreases in the way of middle meats.
Dutch country veal is looking very good.
Hallal Veal is also available!
Lamb – Lamb is starting to see its seasonal movement. Domestic Colorado lamb is of great quality, after having a fantastic crop year last year. The marble on the meat is absolutely wonderful. Prices are Strong. Supply levels are good.
Imported lamb is available and looking steady. Loins have calmed down and are in steady supply. Racks and shoulders are up.
Pork – Pork is in steady supply and is looking like the best food cost item to place on that menu.
Berkshire Pork is coming into perfect season as the acorn season was plentiful. All cuts are available and in good supply.
Poultry – Chicken and turkey is seeing slight increases. Portions, such as wings, legs, thighs and livers are all seeing strong increases. Winter Months always see and increase on chicken....this year might be different, in that Russia has closed it's borders to U.S. Chicken houses. This certainly will have an impact on the supply levels domesticly and will encourage slightly cheaper prices at market....
Lets wait and see.
Game – Venison is in and has seen very little of the price changes that had been forcasted early this fall.
Saddles, legs, rack and bones are all available.
